Chickpea and Kale Stew

CHICKPEA & KALE STEW:   

Skin boosting ingredient:  Dinosaur Kale! 

Ingredients: 

  • 1 can 14 ounce diced tomatoes

  • ½ cup light coconut milk 

  • 2 cans of chickpeas, drained & rinsed, pat dry

  • ½ cup vegetable broth

  • 1 eggplant diced (or any veggie of choice)

  • 1 bunch dinosaur Kale

  • ½ tbsp EVOO

  • 5 garlic cloves, peeled and minced 

Directions:

  1. Line a baking pan with aluminum foil and coat with EVOO cooking spray

  2. Spread out chickpeas on pan and and generously sprinkle salt and fresh cracked pepper

  3. Spread eggplant on baking sheet 

  4. Roast in oven for approximately 10 minutes at 425 - be sure to check every few minutes 

  5. Add EVOO to skillet with garlic - 

  6. Combine chickpeas, eggplant, diced tomatoes, coconut milk, vegetable broth and simmer for 10 minutes

  7. Add bunch of dinosaur kale - will naturally wilt 

  8. Serve (can add a protein or this meal is filling enough as is )

  9. Salt and pepper to taste 

Optional:  Spice it up - add a dash of cayenne pepper or crushed red pepper
