Carrot Ginger Soup

CARROT GINGER SOUP:  I was looking for foods that may help with easing inflammation and digestion - I love the spicy kick from the fresh ginger! 

Skin boosting ingredient:  Turmeric! This potent plant powder contains curcumin which may reduce inflammation!  Add a pinch of black pepper to boost your body's ability to maximize absorption from this mighty antioxidant! 

Ingredients:

  • ½ tbsp Evoo

  • 1 medium onion 

  • 4 cups vegetable broth 

  • 1 large chunk fresh ginger peeled and chopped, minced,

  • 1lb carrots 

  • ½ tbsp turmeric

  • Salt and pepper

Directions: 

  1. Add oil to cooking pan and heat stove to medium, onion until translucent

  2. Add broth, turmeric, ginger, and carrots - simmer till soft

  3. Pour ingredients into a high powered blender, blend and serve!
