Carrot Ginger Soup
CARROT GINGER SOUP: I was looking for foods that may help with easing inflammation and digestion - I love the spicy kick from the fresh ginger!

Ingredients:
½ tbsp Evoo
1 medium onion
4 cups vegetable broth
1 large chunk fresh ginger peeled and chopped, minced,
1lb carrots
½ tbsp turmeric
Salt and pepper
Directions:
Add oil to cooking pan and heat stove to medium, onion until translucent
Add broth, turmeric, ginger, and carrots - simmer till soft
Pour ingredients into a high powered blender, blend and serve!
