THE ROYGBIV
THE ROYGBIV: A vibrant medley of phytonutrients with a spectrum of beauty boosting benefits!
Optional: Add a plant based protein like tofu or top with a hard boiled egg for your own pot of gold.
Skin boosting ingredient: Phytonutrients (think antioxidants, antiinflammatory, anti aging compounds) are naturally occurring in fruits and vegetables that serve the body with a spectrum of beauty boosting benefits.
Ingredients:
4 cups kale (or mixed greens of choice)
1 tomato
1 radish
1 red bell pepper
1 orange bell pepper
1 cup shredded carrots
1 yellow bell pepper
1 cup chopped red cabbage
Himalayan sea salt
Fresh cracked pepper
Make Magic:
Toss the chopped kale with EVOO
Drizzle balsamic vinegar over top Ironically, I use a fruit flavored balsamic vinegar named “blushing” peach
Add a pinch of himalayan sea salt and cracked black pepper
Split into two plates!
Arrange chopped veggies on top in spectrum order: ROYGBIV!
Dressing: I go simple here - a light drizzle of EVOO with a splash of flavored balsamic vinegar does the trick! I massage the kale with olive oil and then drizzle a blushing peach balsamic on top!
“The Rainbow Connection” One of my favorite units to teach is taught through the phenomenon of rainbows. Observing how light interacts with a range of mediums is perplexing and beautiful. Naturally, rainbows became the symbol for hope throughout the pandemic that were widely observed on front doors. This radiant display of energy gets us to “look up” and for that moment, we are all connected.
