Hangry Herbivore

HANGRY HERBIVORE: This hearty salad is nutrient dense and loaded with fiber to keep your gut full and satisfied.

Skin boosting ingredient: PUMPKIN SEEDS:  These mighty seeds are loaded with essential fatty acids, antioxidants and a range of skin loving minerals to boost your glow! The bright orange hues from sweet potatoes, carrots, and butternut squash reflect a healthy skin-loving dose of beta carotene! 

Ingredients: 

  • 1 sweet potato, peeled & chopped 

  • 2-3 rainbow carrots, peeled & chopped

  • 2 cups butternut squash, peeled & chopped 

  • 4 cups spinach (or mixed greens of choice)

  • 2 tbsp pumpkin seeds, 

  • 4 tbsp nutritional yeast 

  • ½ tbsp EVOO

  • Himalayan salt & fresh cracked pepper 

  • Lemon wedge  

Directions:

  1. Preheat oven to 425°F

  2. Chop veggies and place in a large bowl

  3. Coat veggies with EVOO 

  4. Add a sprinkle of himalayan sea salt and cracked pepper

  5. Mix in bowl and pour onto a lined baking pan

  6. Sprinkle a generous amount of nutritional yeast on top of veggies 

  7. Roast for approximately 30 minutes - depending on the size and type of vegetable the roasting time varies - Check for browning and stir/flip occasionally!  

  8. Place washed greens in a large salad bowl

  9. Add a drizzle of EVOO, fresh cracked salt and pepper and toss!

  10. Split into two plates

  11. Layer with roasted chopped roasted veggies 

  12. Sprinkle pumpkin seeds on top and serve with a wedge of lemon 

Extra Credit: Add a dollop of CHICpea hummus for an extra savory bite
