Beet the Blues

BEET THE BLUES

Skin boosting ingredient:  Blueberries!  These blue beauties contain powerful antioxidants that protect your skin from free radicals while providing a hefty dose of fiber which keeps your digestive system running smoothly.  

Ingredients:

  • 2 cups chopped steamed beets 

  • 4 cups arugula

  • 1 cup blueberries 

  • 2 ounces goat cheese

  • Fresh cracked pepper

  • EVOO/Balsamic of choice

Directions: 

  1. Wash and rinse arugula and place in mixing bowl

  2. Lightly coat greens with drizzle of EVOO

  3. Add beets, blueberries, and, crumbled goat cheese

  4. Split into two plates and add a sprinkle of fresh cracked pepper
