BEET THE BLUES
Skin boosting ingredient: Blueberries! These blue beauties contain powerful antioxidants that protect your skin from free radicals while providing a hefty dose of fiber which keeps your digestive system running smoothly.
Ingredients:
2 cups chopped steamed beets
4 cups arugula
1 cup blueberries
2 ounces goat cheese
Fresh cracked pepper
EVOO/Balsamic of choice
Directions:
Wash and rinse arugula and place in mixing bowl
Lightly coat greens with drizzle of EVOO
Add beets, blueberries, and, crumbled goat cheese
Split into two plates and add a sprinkle of fresh cracked pepper
